Grilled Tempeh Kebabs

Recipe Ingredients
2 Tbs  mustard            
3 Tbs cider vinegar    
1 Tbs tamari    
4 Tbs honey    
8 oz tempeh                 
8 medium mushrooms         
1 green pepper, cut in 2 inch squares       
1 medium zucchini, cut in 1 inch slices    
1 onion, in 8 wedges             
8 cherry tomatoes   

 

Recipe directions

Steam tempeh for 10 minutes.
Mix first 4 ingredients together to make marinade. Cut steamed tempeh into 1 inch cubes. Add all the vegetables except the cherry tomatoes to the dish and pour the marinade over them. Cover and marinate in the refrigerator for at least 4 hours. Carefully stir over a few times while marinating.

Divide the marinated ingredients evenly, along with the cherry tomatoes, and thread on four skewers. Place under a broiler or on the grill. Cook, turning and brushing with marinade a few times, until vegetables are tender crisp (7-10 min).

Serve the grilled tempeh kebabs immediately.
